Can I include my OS drive as part of a RAID configuration?

No.

Just like you cannot include your OS drive in a Windows or Linux software RAID (or any other software RAID for that matter), you cannot include your OS drive in a FlexRAID RAID array.
So, when creating a RAID, always omit your C:\ drive or which ever volume where you have your Operating System installed.

Actually you can use at least Windows RAID1 capability on OS drive.

Linux MDRAID RAID1 works just fine on system disk, all files and partitions included. You can even use RAID0/5/other as well, you just need to make arrangements to have your bootloader, kernel, and initrd on some other medium.
